No Excuses!

Focusing on physical healing has been a huge challenge, as the past year brought so many layers of emotional trauma that have required my full attention and left me with very little energy for anything beyond survival. I still find myself in that “survival mode” from time to time, but it’s getting better. I’m getting better. 

Finding Paleo On the Go was super inspiring and has motivated me to get back into freezer cooking. POTG is a service that ships single-serve frozen paleo (or even AIP) meals. As a single mom, the cost is too high to eat their meals on a regular basis, but I can invest in one of their meal plans every few months to have easy healing food available and for inspiration for making my own freezer meals. 

The results of this inspiration and 1 day of cooking:

All made with strict paleo ingredients (except a conventionally raised pork loin and some grass-fed butter):

  • Thai Coconut Chicken Soup
  • Sofrito Chicken Legs
  • Spaghetti Squash with Meat Sauce
  • Kelp Noodles with Meat Sauce
  • Maple Veal Sausage Stuffed Acorn Squash
  • Cabbage and Bacon
  • Herbed Pork Loin and Ranch Cauliflower
  • Baked Sweet Potatoes with Kerrygold Butter

They are all separated into single serve portions, so I can easily defrost and warm it up in a pot of water on the stove or in the microwave. So, when I am overwhelmed with life and craving comfort food, I’ve got a variety of meals available that will continue to lead my body toward healing. 

The next day, I knocked out some breakfast items. A yummy grain free granola and paleo lemon raspberry muffins. 

Now I have no excuses. Regardless of my emotional state or what I may be dealing with in my personal life, my food is taken care of. It’s healthy, healing food that will nourish my body, so I can continue to focus on nourishing my spirit and letting God heal my soul.
