Thursday’s Dinner

I’d be eating more salads if it wasn’t still slightly painful. Something about the way lettuce leaves poke the lesions that are still there. Anyway, I’m going to a cooking class next week on salads, and figured I’d try to get a head start tonight.


There’s all kinds of stuff in there. Mixed greens, broccoli, kimchi, pumpkin seeds, sesame oil, balsamic vinaigrette, pea snacks, black olives, alfalfa sprouts, and a radish. Stuff that doesn’t seem like it would go together. But it was great.

Also did some juicing. Did my usual red juice to share with my daughter to try to boost her immune system. She’s been sniffly the last 2 days and is now coughing with a slight 99 fever. She wasn’t into the juice tonight, but ate tons of strawberries and apple sauce.

And I juiced this later just for me. Red Swiss chard, rhubarb, and apples.

  1. Looks better than the salad I got at Applebees the other day! Looks delicious. I really need to get into some juicing–that sounds good!

  2. Ii hope baby gets better from her sniffles before we arrive. Hope you can start enjoying salads again, too.
